OFF TOPIC Smoked Pulled Pork

So I have had this idea for awhile that kinda is stuck in my brain. Got brought up again at dinner so thought I’d ask a neutral audience. We’ve had OT discussions about smoking meat in the past, so I thought this may be a good crowd to ask:

Basically the concept is I want to have a hot dog cart… but keep smoked Boston Butt in there that’s been clawed apart.

So just like when someone orders from a hotdog guy: I’ll pull out a hot dog bun, put 1/4 lbs of pulled pork, and have BBQs you can squirt on like you typically would your ketchup and mustard.

Simple enough right? I’m not reinventing the wheel. I’m just substituting the hot dog for pulled pork and swapping condiments.

Some questions I still need answered, and maybe you have it already so I don’t need to research it:

• When you smoke a 10 lbs butt to 200+ degrees, how many lbs are lost to juice and taking out the shoulder? I’ve done it lots of times but never weighed it to get a ratio.

• Hot dog stands… anyone ever used one of those carts before? I actually think the heated water compartment may work out great if you could steam it with apple juice somehow to keep it warm…

• Anyone with food truck experience? That’s essentially what this would be.

• Finally, anyone have one of the biggest Traeger? Mine is small/medium.
